When trying to update and after removing the outdated config file, I get this and can not proceed

Error description and message
I have phpbb_gallery_1_1_1 installed. I want to update I don't know if I am to just use the most recent version 1_1_6, or am I to go from 1_1_1 to 1_1_2 and so on? But when I try with either the 1_1_2 or the 1_1_6 I get fatal errors about the config file.
What I am doing is for example (with the 1_1_6 update for example)
I download the package and drag the install folder into my root of the site root for http://www.armourworkshop.ca/index.php.
I then click on the index file in the browser in my file manager page for the web site
I proceed to next step after overview for update
I am prompted to
Outdated files
Outdated - In order to deny hacking attempts, please remove the following files.
includes/gallery/config.php:
File still exists
so I delete file click on start update
and I get an error message

I go back to the ftp program and delete the install folder.
after I do that I click on the link for my site and I get another error message

So then I have to go back to my back up and drag the config file for includes gallery back to the place on line it needs to be and then the site works fine. But I wanna update.
